Old Site Recipes (4 of 6): Chocolate Covered Ritz Cookies

alright, i know it might sound kind of weird to some of you, but apparently i hear this is a southern thing... got the main idea from Em, who got it from Abbie. i changed it a little (very little) and hope you like it!

Chocolate Covered Ritz Cookies

Ingredients:
  • 1 box Ritz crackers
  • 1 bag waffle pretzels
  • 1 bag semi-sweet chocolate chips
  • 1 bag milk chocolate chips
  • 1 jar smooth peanut butter
  • 1 container of small multi-colored Nonpareil sprinkles
Directions:
Melt both semisweet and milk chocolate chips together in a double boiler*. Smear peanut butter between two Ritz crackers (or two waffle pretzels) and make a sandwich.

Take a fork and use it to dip the sandwich in the melted chocolate, covering the whole thing. Carefully tap off any excess chocolate. Place finished product on a cookie sheet lined with waxed paper or parchment paper.

Throw some sprinkles on the top of the chocolate-cookie-sandwiches and let them cool and set. Keep going until you run out of chocolate. Once you have a tray-ful, put it in the fridge to harden further for about half and hour to an hour. Take out and eat.

*if you dont have a double boiler (i dont) just use a bowl over a pot of water. a stainless steel bowl will work, but will get pretty hot and hard to handle. i used a glass bowl so i can kind of see whats going on with the water while i work, but you can use ceramic too. dont put too much water in the pot - you want the heat from the steam to heat up and melt the chocolate - and BE CAREFUL you dont burn yourself from the steam.......
